CHICKEN TOMATOES & BEANS

30 MINUTE COOK TIME

Ingredients:

  • 2 kg frozen chicken wings
  • 3/4 cup BBQ or buffalo wing sauce
  • 100 gm butter
  • 2 tbsp. olive oil
  • 2 cloves garlic, peeled and minced
  • 1 large onion, peeled and diced
  • 1 medium red bell pepper, seeded and diced
  • 3 plum tomatoes, diced
  • 1 tsp. ground cumin
  • 1 tbsp. paprika
  • 4 cups chicken stock
  • 1 tbsp. sea salt
  • 1/2 tsp. cayenne pepper
  • 1 tsp. freshly ground black pepper
  • 2 tbsp. fresh cilantro, chopped

Instructions:

  1. Prepare the Pressure Cooker:

    • Place the inner pot into the Power Pressure Cooker XL.
    • Add the olive oil to the inner pot.
    • Press the SAUTÉ button.
  2. Sear the Chicken:

    • Sear the chicken wings in batches.
    • Remove and set aside.
  3. Sauté the Aromatics:

    • Add the onions, bell pepper, and garlic to the inner pot.
    • Sauté until softened.
  4. Add Remaining Ingredients:

    • Add the tomatoes, spices, chicken stock, sauce, butter, and seared chicken wings.
  5. Cook the Chicken Wings:

    • Place the lid on the Power Pressure Cooker XL and switch the pressure release valve to Closed.
    • Press the CANCEL button.
    • Press the BEAN/LENTIL button 3 times to set to 30 minutes.
  6. Final Steps:

    • Once the timer reaches 0, the cooker will automatically switch to KEEP WARM.
    • Switch the pressure release valve to Open.
    • When the steam is completely released, remove the lid.
  7. Serve & Enjoy:

    • Garnish with fresh cilantro and serve with extra BBQ or buffalo sauce.
