CHICKEN TOMATOES & BEANS
30 MINUTE COOK TIME
Ingredients:
- 2 kg frozen chicken wings
- 3/4 cup BBQ or buffalo wing sauce
- 100 gm butter
- 2 tbsp. olive oil
- 2 cloves garlic, peeled and minced
- 1 large onion, peeled and diced
- 1 medium red bell pepper, seeded and diced
- 3 plum tomatoes, diced
- 1 tsp. ground cumin
- 1 tbsp. paprika
- 4 cups chicken stock
- 1 tbsp. sea salt
- 1/2 tsp. cayenne pepper
- 1 tsp. freshly ground black pepper
- 2 tbsp. fresh cilantro, chopped
Instructions:

Prepare the Pressure Cooker:
- Place the inner pot into the Power Pressure Cooker XL.
- Add the olive oil to the inner pot.
- Press the SAUTÉ button.

Sear the Chicken:
- Sear the chicken wings in batches.
- Remove and set aside.

Sauté the Aromatics:
- Add the onions, bell pepper, and garlic to the inner pot.
- Sauté until softened.

Add Remaining Ingredients:
- Add the tomatoes, spices, chicken stock, sauce, butter, and seared chicken wings.

Cook the Chicken Wings:
- Place the lid on the Power Pressure Cooker XL and switch the pressure release valve to Closed.
- Press the CANCEL button.
- Press the BEAN/LENTIL button 3 times to set to 30 minutes.

Final Steps:
- Once the timer reaches 0, the cooker will automatically switch to KEEP WARM.
- Switch the pressure release valve to Open.
- When the steam is completely released, remove the lid.

Serve & Enjoy:
- Garnish with fresh cilantro and serve with extra BBQ or buffalo sauce.
