Reuben Riffels' Vanilla Soufflé Pancakes

Create Celebrity Chef Reuben Riffel's sumptuous and fluffy soufflé pancakes at home using your Milex Nutri 1200 Blender. Mixing your batter in the Milex Nutri 1200 creates an airy and fluffy mixture perfect for a weekend brunch or breakfast indulgence.

 

 


Vanilla soufflé Pancakes, Berries, Maple syrup 🥞

2 egg yolks
50ml cream
40g flour
1/2 teaspoon Baking powder
1 tbsp vanilla extract
2 egg whites
2 tbsp sugar
A little oil

In the blender cup add together cream, yolks, flour, baking powder and vanilla extract.
Pulse until fully combined and remove batter into a container.
Whisk egg whites until soft peaks and add sugar. Whisk until just firm.

Add a third of this mixture into the yolk mixture and stir through until combined. Fold in the rest without over mixing.

Heat a nonstick pan and brush with oil. Using a spoon or ice cream scoop to measure batter, spoon into pan. Sprinkle some water around the batter. The steam allow for a softer fry.

Turn once and remove. Continue with the rest of the batter.

Serve with berries and maple syrup.

Optional, complete your brunch with a refreshing smoothie.

Mango-banana, Naartjie, Fresh Mint Smoothie:

1 small ripe mango
1 small banana
1 naartjie
2 fresh mint leaves
2 full spoons full cream yoghurt
1/4 cup mango juice

Add together and blend until smooth in the Milex Nurti 1200 8 in 1 Blender.
