POT ROAST
25 MINUTE COOK TIME
Pot Roast (Pressure Cooker XL Recipe)
Ingredients:
- 1/2 kg chuck roast
- 2 tbsp. vegetable oil
- 1 medium onion, peeled and thinly sliced
- 1 carrot, peeled and cut into 3-inch pieces
- 1 stalk celery, diced small
- 8 baby potatoes
- 1 tbsp. tomato paste
- 1 1/3 cups beef broth
- 1 bay leaf
- 1 sprig rosemary
- 3 cloves garlic, peeled and minced
- 1/4 cup red wine
Instructions:

Season the Roast:
- Season the chuck roast well with salt and black pepper.

Prepare the Pressure Cooker:
- Place the inner pot in the Power Pressure Cooker XL.
- Add the oil to the inner pot.
- Press the SAUTÉ button.
- Place the beef in the oil and cook until it is lightly browned on all sides.
- Remove the beef and set aside.

Cook the Vegetables:
- Place the vegetables in the inner pot and cook for 2-3 minutes.
- Add the tomato paste and cook for 1 minute.
- Add the bay leaf, rosemary, red wine, and beef broth.

Add the Beef Back:
- Place the beef back in the pot.

Cook the Pot Roast:
- Place the lid on the Power Pressure Cooker XL, lock the lid, and switch the pressure release valve to Closed.
- Press the CANCEL button.
- Press the CHICKEN/MEAT button.
- Press the TIME ADJUSTMENT button until you reach 25 minutes.

Final Steps:
- Once the timer reaches 0, the cooker will automatically switch to KEEP WARM.
- Switch the pressure release valve to Open.
- When the steam is completely released, remove the lid.
