FRENCH ONION SOUP
12 MINUTE COOK TIME
Ingredients:
- 4 medium onions, peeled and sliced
- 3 cups beef stock
- 2 sprigs thyme
- 1/2 cup medium sherry
- 8 slices Swiss cheese
- 6 slices of Ciabatta, toasted
- 1 tsp. sea salt
- 1 tsp. freshly ground black pepper
- 1 bay leaf
- 3 tbsp. butter
Instructions:

Prepare the Pressure Cooker:
- Place the inner pot in the Power Pressure Cooker XL.
- Press the SAUTÉ button.
- Add the butter and the onions, stirring occasionally until onions are cooked and caramelized.

Add Seasonings & Stock:
- Add the herbs, seasoning, and sherry.
- Cook for 1 minute, then add the beef stock.

Cook the Soup:
- Press the CANCEL button.
- Place the lid on the Power Pressure Cooker XL, lock the lid, and switch the pressure release valve to Closed.
- Press the SOUP/STEW button.
- Press the TIME ADJUSTMENT button until you reach 12 minutes.

Add the Bread & Cheese:
- When the time runs out, carefully release the steam.
- Place the toasted bread on top of the soup and layer the Swiss cheese on top of the bread.

Melt the Cheese:
- Place the lid back on and close the steam release button.
- Press the FISH/VEGETABLE button once to set for 2 minutes.

Final Steps:
- Once the timer reaches 0, the cooker will automatically switch to KEEP WARM.
- Switch the pressure release valve to Open.
- When the steam is completely released, remove the lid.
